Brisket (Josephine)

Bigger brisket at 5.5 lbs look longer than I thought.  I tried to keep it fat side down but ended up flipping at 8 hours.  Bark was still a little soft.  I used cherry and a little hickory.  I also John Wayne’d the rub (probably too much sugar).  No red smoke ring.  I think I need to start spritzing or basting and leaving fat side down.

Flavor was still great but could be better.
